Receta de la Semana: Arroz con verduras al curry
Preparacion:
1. En un sartén grande, calentar el aceite a fuego medio. Añadir la cebolla y el curry en polvo. Cocinar 2-3 minutos, revolviendo constantemente.
2. Añadir el resto de ingredientes y llevar a hervor. Reducir el fuego, cubrir y cocinar 20-25 minutos o hasta que el arroz esté listo.
3. ¡Dividir y servir!
INGREDIENTES:
•2 cucharaditas de aceite de canola
•1 cebolla, picada
•1 cucharadita de curry en polvo
•1 bolsa (24 oz) de mezcla de vegetales (zanahorias, elote, arvejas, ejotes)
•1 papa grande, pelada y picada
•1 taza de arroz integral
•1 lata (15 oz) frijoles rojos sin sal añadida, escurridos y enjuagados
•2 tazas de agua
