Receta de la Semana: Huevos Rancheros

Preparacion:

1. Precalentar el horno a 325. Cubrir ligeramente un molde para muffins con aceite en aerosol.

2. Rociar aceite en aerosol en un sartén antiadherente mediano y calentar a fuego medio. Calentar ambos lados de cada tortilla para que quede flexible; colocar rápidamente en el molde para muffins y presionar suavemente hasta que tome forma de una taza. Repetir con todas las tortillas.

3. En un tazón pequeño, combinar los frijoles, el condimento para tacos y la salsa. Aplastar con un tenedor.

4. Llenar las tazas de tortilla hasta la mitad con la mezcla de frijoles, presionando ligeramente. Hornear 8-10 minutos, o hasta que los bordes de las tazas estén crujientes.

5. Retirar el molde del horno y añadir la cebolla y el queso a cada taza. Hornear 3 minutos, o hasta que el queso se derrita. Poner a un lado.

6. Rociar aceite en aerosol en el sartén utilizado para las tortillas y calentar a fuego medio-alto. Freír 8 huevos a su gusto.

7. Colocar un huevo encima de cada taza de tortilla. Servir con salsa, cilantro y aguacate.

• Aceite en aerosol antiadherente

• 8 tortillas (6 pulgadas) de maíz

• 1 lata (15 oz) de frijoles negros sin sal añadida, escurridos y enjuagados

• 2 cdtas de Condimento para Tacos*

• 1/4 taza de salsa

• 1/2 cebolla morada pequeña, finamente picada

• 1 taza de queso fiesta rallado

• 8 huevos grandes

• 1/2 taza de cilantro picado

• 1 aguacate, en rodajas
